Often, I find myself looking for a simple, delicious weeknight meal and can’t decide on one.

I decided to try honey and teriyaki sauce with chicken and it was a huge hit with our family!

The mix of the honey teriyaki chicken with the amazing cilantro lime rice works perfectly.

Even better? It’s super easy to make, made with a simple sauce and frozen chicken.

Follow the instructions below, and you’ll have a super filling, flavorful, and fresh meal for your family!

 

INGREDIENTS FOR CHICKEN:

In this recipe, we felt that using frozen chicken made more sense given the short cooking time in the instant pot and convenience.

The flavor is just as good, and the sauce really enhances the relatively simple flavor of the chicken.

We used 4 chicken breasts, but you can super easily scale these ingredients up if you need to feed more people!

The sauce has a relatively long ingredient list, with soy sauce, some chicken broth, garlic powder, rice wine vinegar, sesame oil, honey, and cornstarch combining for an amazing sauce.

But don’t let the ingredient list fool you, it’s still incredibly easy to make!

4 chicken breasts, frozen

1 cup soy sauce or coconut aminos

½ cup chicken broth

2 tsp garlic powder

2/3 cup rice or apple cider vinegar vinegar

2 Tbsp sesame oil

½ cup honey

4 Tbsp cornstarch

Lime wedges for serving 

Cilantro or green onion to garnish

CILANTRO LIME RICE

Cilantro lime rice is pretty straightforward to make, with only a few ingredients needed.

We used brown rice for a slightly healthier option, but you can absolutely use white rice if you’d prefer!

Just like the chicken, this is something that you can easily scale up if you need to feed more people.

With brown rice, either chicken broth or water, the juice of one lime, some chopped Coltrane, and just a pinch of cumin, you can produce some really amazing rice.

INGREDIENTS FOR RICE:

1 cup brown rice

2 cups broth or water

Juice of one lime

2-3 tablespoons chopped cilantro

1 tsp ground cumin

Sea salt and pepper to taste

 

INSTRUCTIONS FOR THE CHICKEN:


Place the frozen chicken breasts in the instant pot.

The exact orientation is up to you, but we put them vertically.

Then, add the soy sauce, chicken broth, garlic powder, vinegar, sesame oil, honey, and half the cornstarch into a bowl and mix thoroughly until combined.

Pour the sauce over the chicken and you’re ready to go!

Close the instant pot and the valve. 

Set the instant pot and cook on high pressure for 25 minutes.

When done, allow the steam to naturally release before opening your instant pot.

Chop the chicken or roughly shred it with a fork. 

It really depends on how you like your chicken, personally, we shredded it.

When done, set the Instant Pot to saute and sprinkle the chicken with the remaining cornstarch. 

Mix and cook for around 5 minutes until the sauce has reduced.

If it sticks to the back of a spoon, you’re about ready to go!

INSTRUCTIONS FOR THE RICE:

Bring the chicken broth or water to a boil. 

Add the rice and cook according to the package, making sure that you’re using the right rice to water ratio.

When done, fluff the rice with a fork and mix in the cilantro and lime juice.

Be careful not to overcook the rice, as it’ll become super mushy.

Add salt and pepper to taste and you’re ready to plate.

You can sprinkle with the extra cilantro or some diced green onion on top, then add a squeeze of lime.

You can also garnish with some red cabbage if you’d like, it adds a nice fresh bite to the dish.

It’s very hard to have this meal not look delicious on a plate or bowl, and you can absolutely get away with a slightly messier presentation.

If using coconut aminos, reduce the amount of honey to ⅓ cup.

The sauce ends up far too sweet if you don’t!
