Coincidentally, we have an incredibly delicious and filling one to share!

Whether you’re on the road, have a small kitchen, or just don’t feel like doing a lot of dishes, one-pan recipes are perfect.

This One-Pan Broccoli Cheese Chicken Rice Casserole is packed with flavor, and will absolutely satisfy any amount of hunger.

Cheesy, and hearty, with just the right amount of everything, you can’t go wrong with this lovely recipe.

Ingredients:

Another great feature of this recipe is the relatively straightforward recipe list!

A pair of chicken breasts is a must, along with a few cups of chicken brother and a can of cream of chicken soup!

Fresh broccoli florets, a small onion, a few cloves of garlic, and some parsley are all your veggies for this recipe.

Shredded cheddar cheese is all we need for the amazing cheesy flavors we’re looking for, and it hits the right spot.

Rice, a bit of olive oil to get it all going, and salt and pepper are all you need to finish this off!

Ingredients:

 

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 chicken breasts, cut into small pieces
  • Salt & pepper
  • 4 cloves garlic, minced
  • ¾ cup rice
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • 2 cups fresh broccoli florets
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon parsley

Preparation Instructions:

The most important part of a one-pan/pot meal is keeping everything balanced and working step by step.

First, you’re going to want to begin cooking the chicken and onions with a tablespoon of oil oil over medium heat.

About halfway through the cooking process, add salt, pepper, and garlic and stir.

When the chicken is done on the outside and the onions are translucent, add the rice, soup, and broth, then bring to a boil.

Reduce and cook until the rice is done.

Now that your rice is done, stir in the broccoli florets and half a cup of cheese.

When done, sprinkle the remaining cheese on top.

If you have an oven, place the pan under the broiler until the cheese is golden brown on top.

If you don’t, don’t worry! 

Instead, cook over the stovetop until the broccoli is tender and the cheese is melted.

Garnish with fresh parsley if desired, serve in bowls and you’re ready to eat!

Stir in broccoli and ½ cup cheese

Sprinkle remaining cheese on top

Place under broiler until golden if you have an oven in your RV.

You can also cover your pan and let it cook on low on the stovetop until cheese is melted and broccoli is just tender (about 4-5 minutes).
