INGREDIENTS:

  • 1 1/2 pounds chicken tenderloins
  • 1/3 cup Dijon mustard (course ground is best)
  • 1 shallot, minced
  • 4 tablespoons honey
  • 2 tablespoons olive oil
  •    2 tablespoon freshly squeezed lemon juice
  • 2 tablespoons Herbs de Provence
  • 1 teaspoon fresh or dried rosemary 
  • 1 teaspoon fresh or dried oregano
  • Sea salt and freshly ground pepper to taste

DIRECTIONS:

This marinade is super easy to make!

The first thing you’ll want to do is mince the shallot.

After that, remove the fresh rosemary from the stems and lightly chop along with the oregano.

Once those are done, make sure you have the other ingredients ready and start mixing!

First, add 1/3 cup of dijon mustard, then the juice of half a lemon, 4 tablespoons of honey, and 2 tablespoons of olive oil.

Once the wet ingredients are well incorporated, add the diced shallot, your herbs, then add salt and pepper to taste.

Combine thoroughly, and you’re ready to go!

Once you’re confident your chicken is done marinating, pull it and the extra marinade out of the fridge and get ready to start grilling!

When you’re ready, preheat your grill to medium-high heat.

We want the grill to be hot enough to give us some great grill marks but not too hot, as that can cook the outside too fast while leaving the inside dangerously uncooked.

When your grill is properly heated, place the chicken strips onto the grill, they don’t need to be spaced too far apart but a little room will make them easier to flip.

You’ll want to leave them on for about 8-10 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.

Use a pair of tongs to flip halfway through so the chicken cooks evenly and you develop those grill marks on both sides!

After Grilling

Once your chicken is done, pull it off the grill and place it on a plate to serve.

Drizzle generously with the remaining marinade and then allow the meat to rest for five to ten minutes.

If you’re making a larger batch of them, you can place them on a tray in a low oven to keep warm.

  2. In a large bowl or plastic bag, combine marinade with chicken and refrigerate for at least one hour, or overnight.
  3. Preheat your grill to medium-high heat.
  4. Place chicken on the grill and cook until chicken is completely cooked through, about 8-10 minutes, flipping halfway. (Or when the meat reaches an internal temp of 165 degrees F).
  5. Drizzle with remaining to marinate and let the meat rest for 5 minutes. 
  6. Great served warm with rice or chilled and tossed with a salad.
