Ingredients:

Crumble And Crust

You really don’t need many ingredients for the perfect crust, and they don’t take much preparation either!

Crumbly, chewy, and with a perfect mix of flavors, this crust is super easy to make.

All you need for ingredients are:

1 1/2 cups all-purpose flour

1 1/2 cups old fashioned rolled oats

3/4 cups light brown sugar

1/2 teaspoon cinnamon

1/2 teaspoon kosher salt

1 cup cold butter, cubed

 

Blueberry Filling

The obvious star of this dessert, this blueberry filling is super easy to make!

Super sweet, fruity, and with a little citrus hit from the lemon juice, the texture of this filling contrasts amazingly with the crumbly, chewy crust.

With only four ingredients this filling is incredibly simple to make.

Just use these ingredients:

3 tablespoons cornstarch

2 1/2 cups blueberries

1/2 cup granulated sugar

1 tablespoon lemon juice

 

DIRECTIONS

Once you have all your ingredients gathered, there are only a few simple steps to make these wonderful Blueberry Crumble Bars.

For the crust:

First, you’ll want to preheat your oven to 350 degrees Fahrenheit.

Before you start mixing your ingredients, prepare a baking sheet by lining it with parchment paper and then coat it with nonstick spray.

Once that’s done, set the sheet aside and get a bowl so you can start mixing your dry ingredients.

In a large bowl, start by combining the flour, rolled oats, brown sugar, cinnamon, and salt.

Once those are roughly combined, add in the cold butter cubes and mix the entire bowl together until the texture roughly resembles crumbly sand.

Now that your ingredients are properly mixed and ready to go it’s time to start really forming our bars!

You’re going to want to reserve 2- 2 ½ cups of the mixture and then press the remaining mix into the bottom of the prepared pan.

It doesn’t have to be perfectly smooth and uniform (you explicitly want those noticeable crumbly bits!) but you definitely want to form a solid layer of the crust so your bars don’t break apart.

Once you’re done pressing your crust into the pan, you’re ready to start on the filling!

We’ve already touched on the filling earlier in the recipe, but it needs to be said again: this filling is AMAZING.

It’ll be hard to resist trying out at least a little bit before you’ve put it onto the crust, and I can’t really blame you if you sneak a taste!

For the filling:

First, combine the cornstarch and sugar in a large bowl.

Once it’s thoroughly combined together, add in the lemon juice.

Once those ingredients are mixed, gently mix in the blueberries and stir until they’re coated in the sugar mixture and continue until just combined.

Now you’re ready to start adding the filling to your crust!

Now comes the fun part: doing your best to evenly distribute the filling across the crust to give you nice, relatively uniform filling in the bars.
